CHELO KABAB
This is the
national dish of Iran. In this platter you will be having
chicken sikh kabab,
mutton kabab, butter rice, roasted tomato, onion & 1 egg poach.
Today I’m
going to make this on tawa .
This dish
contains 3 valuable steps.
1.Marinating
2.Cooking,
3.Assembelling.
So let's start making it.
Ingredients (for two plates of CHELO KABAB) :
1/Cooked Basmati rice- for 4 plate (2 cup)
2/Butter- 50 gm
3/Salt- as per taste
4/Egg- 1 for each plate
5/tomato- half for each
6/Onion- full 1 for each plate.
7/ Chicken boneless cube (without fat) -250 gm
8/Mutton paste (without fat)- 200 gm
9/Ginger-Garlic paste- 3 tbsp
10/Hung curd- 200 gm
11/Coriander powder-2 tsp
12/Cumin powder- 2 tsp
13/Garam mashala powder- 3 tsp
14/Red chili powder-2 tsp
15/ Turmeric powder – 2tsp
16/Onion (finely chopped) - 3 tbsp
17/Roasted gram flour- 3 tbsp
18/Cardamom - 2
19/Lemon juice- 3 tbsp
20/ Sugar- 4 tsp
21/Kasuri Methi- 1tsp (crushed)
22/Raw papaya paste- 2 tbsp
23/Oil- 4 tbsp
24/Onion (cube)- 12 piece (For chicken kabab)
25/Capsicum- 12 piece (For chicken kabab)
Method:
1/Take a
large container, add chicken cube & marinate them with lemon juice &
salt. Rest it for 30 min. Then squeezes all the water from the chicken.
2/Now add
hung curd, sugar 1 tsp, kasuri methi (crushed) 1tsp ,1tsp each all the powder
spices (cumin, coriander, red chili, turmeric, garam masala powder),& 1
cube of butter,
3/Mix them
nicely & place it in the refrigerator for overnight.
4/On the
other side take mutton paste & mix it with raw papaya paste, salt, sugar
1tsp,1 cube of butter, 1tsp each all the powder spices (cumin, coriander, red
chili, turmeric, garam masala powder) & roasted gram flour.
5/ Place
that in the refrigerator for atleast 30 min.
6/Now take a
skewers (metal or bamboo) and a bowl of water to keep your plum wet.
7/Now take, a medium portion of mutton mixture & lightly
wrap it, around the skewers, gently squeeze into long shape.
8/Now take a tawa, keep in on medium flame & add 2 tbsp of oil.
9/After a min add the mutton kababs and fry it. Keep
brushing them with butter.
10/On the other side, thread chicken, onion & capsicum
on the skewers, divide equally.
11/Add 2 tbsp of oil on the tawa, grill the chicken skewers
& keep brushing them with butter. Each side will take 3min.
12/Now roast the tomatos.
13/Now add a large cube of butter and sauté the cooked rice,
along with some salt, pepper powder & sugar.
14/Now the last step of cooking, poach 2 egg.
15/On a serving plate, add butter rice spread it lightly,
place two types of kabab, on each side. Add poached egg on the top of the rice,
& add roasted tomato and onion also. Lastly add a cube of butter on the top
of the rice & enjoy.
