Kulcha

       


Amtirsar is a small city, which is famous for Golden Temple & its food. Almost every side of the street have kulcha stole. Indian flatbread (Kulcha), served with chickpeas in a spicy gravy(Channa Mashala). Talking about Amritsari Kulcha by name tells that the dish is of Amritsar.i’m just trying to make this in my style inspired from amritsari kulcha.

                                

Ingredients:-

      *For Kulcha dough*
1.    Plane Flour- 250 gm
2.    Yougurt-150 gm
3.    Baking Powder- 1 tsp
4.    Baking Soda- 1.5 tsp
5.    Salt- 1.5 tsp For Dough
6.    Powder Sugar- 1 tbs
7.    Oil – 2 tbs
8.    Water- Half cup or (as needed)
9.     Sesame Seed- 2 tbs
10.  Coriander leaves- 2-3  tbs
*For Stuffing* 
11.  Boiled Potato- 2 medium size
12.  Onion- 1 small size(roughly chopped)
13.  Green chili- 1 (roughly chopped)
14.  Garam Masala- 1 tsp
15.  Turmeric Powder- 1tsp
16.  Coriander powder- 1 tsp
17.  Cumin powder- 1 tsp
18.  Red chili powder- 1 tsp
19.  Chat Masala- 1 tsp
20.  Dry mango powder(aamchur) – 1 tsp
21.  Cottage Cheese – 50 gm
22.  Salt - as per taste
23.  Butter – 1 cube for each kulcha

Method:-


For making kulcha firstly we need to make the dough.

In a strainer add all the dry ingredients & strain them in a large mixing bowl.

2   2)  Mix them lightly. Make a well in the center.
3   3) Add yogurt & oil, mix them by hand.
4   4) Now add water in little amount, and start to knead , make a soft & smooth dough.

5   5) Cover it with wet kitchen towel. Rest it for atleast 30 min.
6  6 ) Meanwhile let’s prepare the stuffing.
7  7) Take a mixing bowl add boiled potato ( make sure all the moisture released from it), mash it.
8  8) Now add all the Ingredients mention under *For Stuffing* category.
9  9) Mix them well, keep it aside.
1 10) Now take a large portion from dough, flatten it 5 inch’.
1 11) Add sufficient stuffing and roll it again.
1 12) Then flatten it, make small & semi thick kulcha.
1 13) Sprinkle some sesame seed & fresh coriander leaves on the top of it,
1 14) Brush some water on the other side.
1 15)  Now heat up a nonstick tawa place the kulcha wait for 2 min.
1 16)  Flip it over,
1 17)  Then after a min or so flip it again, and grease with butter.
1 18)  Place them on plate.
1 19)  Maintain the same process make other also.
