Keshor Pista Sondesh
Sondesh is a very popular dessert of
Bengal. In Bengal you can have various kinds of Sondesh.
Of late, many experiments are done
with Sondesh. But the trick is, if you learn a basic Sondesh recipe, then
you yourself can go on doing experiments .Lets start!
Ingredients:-
1/Milk-
half liter
2/Sugar
Powder- 8 tbs
3/lemon
juice- 3 tbs
4/Water-
6 tbs
5/Cardamom
Powder- half tsp
6/Saffron
or Keshor- few strands
7/
Pista Powder- 1 tbs
8/Cashew-
3-4 (For garnishing)
9/Raisin-
3-4 (For garnishing)
Process:-
1/Boil
the Milk, after 1 boil, remove it from the gas.
2/Let
it get cool slightly.
3/Meanwhile
mix lime juice & water in a bowl.
4/After
5 mins, add the mixture to the milk slowly in small small quantity.
Continuously stir it while mixing.
5/After
a while,you will see a green extract coming out & the paneer or chana get
separated.At this stage, stop adding lime juice mixture, and stir it with wooden
spatula or any spoon except steel.
6/Now
take a bowl, cover it with a muslin cloth and place the Paneer or chana dough.
Drain all the water and wash it finely.
7/Now
on a flat mixing bowl add the paneer dough and rub it for 7 min.
8/Then
add powder sugar and rub it until the sugar mixes properly & mixture gets
separated from the bowl.
9/Now
on a medium hot pan, add the mixture & keep mixing them gently for
almost 5 min.
10/
Remove it & mix it with Cardamom powder, pista powder & saffron.
11/Then
shape them and garnish them with cashew & raisin.
