DRY ACHARI CHICKEN
This is an north Indian dish made by south Indian mashala. It can be served as a side dish of Nun, Chapati ,Tandoori rooti, or even with Tawa rooti also, along with some onion salad it tastes delicious and it carries a very different flavors with it, spicy ,tangy and hot also..Now let’s have a quick look into the ingredients ,the mashalas which will make this heavenly delicious dish.. J
For making
this dish you will require achari mashala ,to make this you need
1) Turmeric
powder-1tbp
2) Dry red
chili powder-1tbp
3) Garam
mashala powder-1tbp
4) Fenugreek
seeds- 1tbp
5) Aamchur
powder-1tbs
6) Salt-1tbs
7) Coriander
seeds-2tbs
8) Cumin
seeds-2tbs
9) kalongi oSeeds-2tbs
10) Fennel
Seeds- 4tbs
11) Mustard
Seed-2tbs
Method:-
in a mixing jar add ingredients no (1-6) and in a dry pan add remaining ingredients. Dry roast them on a medium flame, then make a smooth powder of it.Mix them with the powder ingredients of that jar. Your achari mashala is ready. Store it in a air tight container and use it for long time… J
Now come to the main dish, for this you will need :-
1)Chicken(boneless
& small piece)-500gm
2)Onion-1
big cut into slices
3)Ginger
& Garlic paste- 2tbs
4)Green
chili- 5-6 piecs
5)Mustard
Oil- 4-5 tbs
6) Bengali panchforon- 1tsp
7) Yogurt- 50gm
8)Turmeric
powder-1tbs
9)red chili
powder- 2tsp
10)Coriander
powder-1 tbs
11)Cumin
powder-1 tbs
12)Achari
Mashala- 2tbs hip full
13) Any
tangy pickle- 1tbs
14)Salt- as
per taste
15)Sugar-
1tbs
16)Lime
juice- half lemon
Now let’s
have a look how to make it..
1)Wash the
chicken & marinate it with salt and lime juice & keep it aside for
atleast 30min.
2)Now take a
karai and add oil to it, allow it to warm
3)Add
panchforn stir it ,
4)Now add
onion fry a little,
5)Add
ginger& garlic paste & silted green chili..stir it
6)Add all
the spices & salt including achari mashala and keep string ,
7)Now add
chicken again stir until the oil get separated,
8)Now add
yogurt mix it
9)Cover it
for 5-6 min when chicken gets perfectly cooked open the lid mix it again,
10)On a high
flame stir it when the chicken gets dry add pickle and sugar mix it, wait for a
min before turning the gas off,
If you want
more tanginess you can add half a tsp of vinegar or lime juice while cooking
the chicken .
Garnish it
with red and green chilis and serve it…
